Lewy Polish Sausage with Steamed Potatoes and Cabbage Soup
1 Polish Sausage Rope, Cut into small pieces
2 TB Olive oil
1/2 Minced Onion
2 Qts Chicken Stock or use Chicken Boullion and water
1/2 tsp Salt & 1/4 tsp Black Pepper
1/2 Head Cabbage cut in chunks
10 steamed white or yellow potatoes cut in small pieces
2 cups half and half or milk
1/ Steam or bake white or yellow potatoes and let them cool . Peel and chop potatoes.
2/ In a pan, saute onion and garlic over medium heat with olive oil.
3/ add cut up Polish sausage (any variety) to Onion and Garlic. If Sausage has a thick casing remove it before chopping up.
4/ Add the Chicken stock, Salt and Black Pepper to the Polish Sausage. Bring to a Boil. Turn heat down to Medium.
5/ Add the cut up Cabbage and cook until Cabbage is steamed.
6/ Add the Potatoes to the Soup Mixture and Stir, cook 10 minutes.
7/ Add the half and half or Milk and stir to blend.
8/ Heat the soup until everything is warm.
