Oooey & Gooey Mac& Cheese

Everybody needs a good Mac& Cheese recipe it is one of my favorite sides next to beans on the plate next to some awesome "Q" this is my recipe give it a try.
This recipe takes a little twist in that the Pasta is cooked in the milk, The starches from the pasta thicken the milk making a velvety smooth sauce
base.

Image

1 lb pasta (your favorite shape I like Cavatopi)
+/-2 quarts whole milk
1/3 cup sour cream
1/4 tsp fresh ground nutneg
Salt & *pepper to taste ( *pinch of cayenne)
1/2 tsp mustard powder
2 1/2 cups grated **Colby & Jack cheese
1/2 cup freshly rated Parmesan cheese

** use what ever cheese you like C&J is my norm

In a deep pot add the pasta and enough milk to cover by 2". Over med /low heat gradually bring to a simmer string occasionally to avoid scorching and stir in the spices
Simmer until pasta is al' dente and sauce has thickened Remove from the heat stir in the sour cream all the Parmesan and 2 cups of the grated cheese.
Transfer to a baking pan or a buttered casserole dish.
Cover the top with the last 1/2 cup and bake at 350 about 20 min until cheese on top has started to get brown and Bubbly.

This recipe is easily adjusted up or down the important is to cover the pasta with the milk by 2"
Never met a cow I didn't like with a little salt and pepper.

Bludawg, have you ever cooked this on a pit or can you reheat on a pit. This recipe looks like a winner.

I have done it on the pit, put it in a disposable pan at 230 it takes about an hour. Add some 1/2 cooked bacon bits to the top the bacon fat helps in crisping the top and really pumps up the smoky flavor :goof:
