Green Beans with Warm Bacon Dressing

3 bacon slices chopped
1 large shallot minced
1/2 c chicken broth
1 T. cider or red wine vinegar
1 lb. green beans trimmed
Salt ñ pepper to taste
garlic granular to taste

Small skillet- cook chopped bacon until crisp. Using slotted spoon -remove bacon to paper towel- set aside. Add shallot same skillet-sauté 5 minutes. Pour in chicken broth with vinegar- bring to boil - cook 2 minutes. Reduce heat to low- keep dressing warm until ready to serve.

Large pot –add 4 quarts salted water to boil. Add green beans* - cook 5 minutes or until vegetables crisp-tender. Drain well -remove to a serving dish. Whisk warm dressing- spoon evenly over green beans sprinkle with reserved chopped bacon. 6 servings.

Notes ~ sometimes add *sliced thin mushrooms when cooking the beans –so Delicious- add grated romano cheese when adding bacon at serving time.
A touch of red crushed pepper flakes goes well too. Do not over power with flakes
A mistake is sometimes a great creation
