Potato Pancakes with Matzo Meal

8 pancakes

Toss in hot sauce or different herbs. You can be as creative as you
like or just make simple version- serve them with fresh applesauce or syrup

3 large Idaho or Yukon potatoes (about 2 lbs.
1 large sweet onion
1 c. matzo meal medium grain
1 egg
1 tsp. salt or more to taste
1/4 c. x virgin olive oil

sour cream

Fresh applesauce or syrup of choice

Peel ñ grate potatoes with onion ñ place both in a large bowl. (If you grate potatoes ahead of time- make sure to soak them in water to keep from turning color- then drain n squeeze when ready to use.

Add matzo meal with egg. Add salt – blend all together until onions ñ potatoes are coated with egg ñ matzo meal.
Let stand 5 minutes.

Roll a ball of dough just big enough to fit into the palm of your hand- flatten it out with your palms to make a round cake. Repeat process until you have used up all the batter.

Place medium saucepan over medium high heat with 1 tablespoon
olive oil. Lay 4 pancakes in hot oil and cook 1 minute on each side -until
golden brown. Remove cakes to paper towels to soak up any excess oil. Repeat adding more olive oil to pan- until all pancakes are cooked.
Serve with sour cream n a side of fresh applesauce with syrup.
