Simple -easy n tasty n NO I don't soak the beans.. Use the small northern beans I do wash them n remove old ones,
Water to fill pot "after' meat ñ poultry in ñ again later
Smoked ham pieces
3 chicken parts thighs or breast skinned remove bones later if any
4 bacon slices cut into pieces Optional
BOIL ALL THIS FIRST N CHILL REMOVE THE FAT N ADD ALL THE REST -BRING TO BOIL N SIMMER TILL TENDER.
3 or 4 celery ribs
1 onion large chop
1 tsp. heaping garlic granular
½ c. or so White northern dried beans
Salt if needed at the very end ñ pepper
Dash of cayenne optional
this is how I do it.. other than what I alreadu stated.
Add meat ñ poultry to pot with lots of water cook till meat pretty tender.mmCool in fridgerator let fat coagulate ñ skim it off discard all fat..
Return to stove adding all other ingredients including the meat ñ poultry- bring to boil ñ turn down to simmer cooking till all beans soft
Do not let water go dry.
Either add a potato or baking soda for control of excess AIR FLUXUATION
