Ranch Potato Wedges

6 baking potatoes peeled thinly sliced
1/4 c. garlic minced
1/4 c. shallots minced
1½ sticks butter little olive oil
1½ c. heavy cream
3/4 c. grated Parmesan cheese
salt ñ pepper to taste

Preheat oven 350°F.
Using large pan or cast iron skillet- sauté garlic ñ shallots in butter over low heat 3 to 4 minutes. Add potatoes - sauté over medium heat -several minutes- or until potatoes become starchy. Season with salt ñ pepper -stir in cream with 1/2 cup cheese.
Reduce liquid until thick enough to coat potatoes. Transfer to a buttered 6” diameter cake pan 2” deep ñ top with remaining cheese. Bake approximately 20 minutes- or until well browned.
A mistake is sometimes a great creation
