Yesterday I did a gig for a 40 yr wedding anniversary and part of it was they wanted one of the sides to be fruit-something. Now generally I don't eat fruit, so what to do to make something good?
I looked at many -make that too many recipes on the net and kind of got the flow of what is going on. So I decided to experiment. The only thing I got more compliments on was my brisket.
OK, someone make this and post back with twists you may have taken. Scale it if you want less.
You will need
8 Mango
3 Papaya
6 - 8 Limes (smaller = more, larger = less)
9 Clementines (small oranges)
3 dried Chipotless
1 bunch Scallions (save the white bottoms for something else)
Heaping teaspoon minced ginger
Dice mangos, papayas. Peel and section Clementines and cut each section into 6 pieces. Combine diced fruit. Zest 2 of the limes and add. Juice limes into mixture. Soak dried chipotles and when reconstituted finely dice them. Add diced chipotles and ginger to the mixture. Thinly slice the scallions and add to the mixture. Mix well and chill overnight.
Goes great with twice smoked ham.
