2 c. shredded deli rotisserie chicken (without skin or any left over chicken
1 c. shredded mild Cheddar cheese
4 ozs. green chiles drained or roasted seeds removed
Green onion chopped with few stems
1 c. Italian plum or Roma tomatoes chopped
1/2 tsp. garlic-pepper blend
3/4 c. sour cream
1/4 c. cooked fresh bacon pieces (from 2 ½ oz. pkg.
Top with cilantro chopped leaves
Scrub potatoes- prick several times with fork. Place potatoes on microwavable plate. Microwave on High 10 to 12 minutes or until fork-tender (depending on UR Micro.
Medium bowl- mix chicken- cheese with tomatoes –onions ñ green chiles
Split each potato in half lengthwise place on microwavable plate. Mash each potato slightly. Sprinkle each with garlic-pepper blend; top with sour cream. Spoon 1/2 cup chicken mixture on each potato. Sprinkle with bacon pieces. Microwave on High for 2 to 3 minutes or until hot and cheese is melted. Serve warm.
Notes~ Wonder how these would be in a smoker or done on the grill??
