1 pkg. small mixed bell peppers washed
2 zucchini medium washed sliced ½ “ thick on diagonal cut
12 asparagus spears washed
1 sweet onion medium peeled cut ½ “ thick
1 red onion medium peeled, cut ½ “ thick
1/4 c. olive oil
Favorite all purpose seasoning such as Morton's Nature Seasons Seasoning
Kosher salt ñ black pepper to taste
Minced fresh herbs such as tarragon-thyme – parsley- for serving optional
Preheat grill to medium high.
Prepare all vegetables-place on a sided baking sheet. Drizzle with olive oil- sprinkle with seasoning blend- salt ñ pepper.
Place vegetables on grill- grill each side until you get nice marks on all sides. Asparagus - zucchini take just a few minutes on each side- remove them when they are still crisp-tender to platter while you finish grilling peppers ñ onions- when cooked –move to plate.. Sprinkle with fresh herbs if desired- serve.
Add some melted butter ñ Romano grated cheese with just little red crushed pepper ñ fresh lemon juice or just grated cheese. 8 servings.
Note~ this goes good with any seafood -or meats as a side.
