Rice enough for 4
1 onion diced medium
1 tsp. garlic granular or less
1 tomato diced medium
1/2 bunch cilantro finely chopped DIVIDED
1 tsp. cumin powder or to UR taste
2 cans seasoned black beans drain well
cheese UR choice
Simmer rice with all 1st group until onions are translucent.
While beans are cooking in water** or chicken broth-
finely dice onion ñ tomato add ñ rest of the cilantro.
Center of plates~ place cooked white rice- layer with beans -
onions- tomatoes ñ remaining cilantro. Sprinkle shredded
Monterey Jack cheese over the top - serve as a main dish
or with a meat side.
Note~ Sometimes I add little saffron threads to the rice while cooking
with the other ingredients. While cooking black beans add little
butter with garlic granular (just a touch.
Notes~ use brown rice if U want
