Sweet Potato or Regular Potatoes Beef Soup

1½ lbs. gr. beef or use stewing meat
1 c. sweet potato diced peeled
1/2 c. onion chopped
1/2 c. red bell pepper chopped
1 tsp. curry powder
2T. all purpose flour
2 c. water or beef broth
1) 15 ½ oz. blackeyed peas rinsed drained
1) 13 ½ oz. light unsweetened coconut milk
2 c. baby spinach leaves packed fresh
3 T. freshly thyme leaves chopped
Salt n freshly ground black pepper to ur taste

Brown ground beef in large nonstick skillet over medium heat 8 to 10 minutes- breaking up into crumbles. Pour off drippings. Add sweet potato- onion-bell pepper n curry powder. Cook 4 to 5 minutes or until onion ñ peppers become crisp tender- stirring occasionally. Stir in flour- cook - stir 1 minute.

Stir in water- black eyed peas with coconut milk- bring to boil. Reduce heat- cover - simmer 5 to 8 minutes or until sweet potato is tender. Stir in spinach n thyme. Cook 1 minute or until spinach wilts. Season with salt and black pepper to taste.

Notes~use regular fresh spinach- stems removed- coarsely chopped or baby spinach leaves.
Or use regular potatoes
A mistake is sometimes a great creation
