Tortilla Chip Apetizers

It does sound good, seems like it would be just as easy to use some nice pulled pork as well. Or even some brisket.

Those appetizers look great. Could add shrimp on top or some green chiles in the meat too.
PLACE EGG SALAD inside the cups or guacamole either shrimp or crab or creamed corn or a thick bean dip. CHEESEY DIP WITH SOME SALSA ON TOP

In fact, I have left over green chili pork and think I'll fill those cups with that.

Making the Tortilla Cups~
Preheat the oven 350⁰F.
Can make those tortilla cups by using a 4" biscuit cutter ñ cutting out 4 round circles from a tortilla. Spray muffin pans with little Pam or olive oil lighty. Place each circle in a muffin cup - will need to fold some of the tortilla in the cups. Bake 10 to 12 minutes ñ remove from oven. Maybe 3 minutes longer- if using cups for egg salad or for fruit cups or just colder fillings. IF PLACING meat Or other items
in the cups. BAKE cups 10 to 12 minutes - remove from the oven ñ add the meat mixture into the tortillas while cups while still in muffin pans ñ place back into oven baking 12 to 15 minutes longer. Tortilla will puff up ñ gives a flaky crunch on the outside.
Notes~ can make these cups ahead of time by a couple days if you like. Place them in an air tight container. Can spice the tortilla cups up with seasonings to spice up the tortilla cups before baking by sprinkling using choice of seasonings as to what you are putting inside the cups. Like garlic granular- chile - jalapeño or ancho pepper or ranch dressing seasonings - or just leave them plain. GET CREATIVE. Make mini enchilada or spaghetti cups or tiny meatballs - fruit cups. Cut up some tater tots mixed with gr. chiles - onion - garlic - black olives - corn - black beans -seasoning - cheese ñ little enchilada sauce mixed altogether ñ fill the cups - baking in those cups ñ bring them out - topping them with cold sour cream or guacamole - cilantro ñ etc. - so good.
