Ingridients:
2 Lbs medium shrimp peeled and deviened
2 sticks butter
cayenne pepper
8 plum tomatos , diced and seeded
2 cloves garlic
1 cup fresh chopped spinnach
2 Tbls. olive oil
1 lb. Linguine Fini , or angel hair pasta . I prefer the Ling.
Cooking Directions :
In a cast iron skillet , heat oil over medium heat , add garlic , shrimp , and cayenne pepper , and 1/2 stick of butter , and continue to cook shrimp til done , always stirring . When shrimp is done remove and place in bowl .
Next , over a low to medium heat , in same skillet , add rest of butter , tomatos , and spinach , you may add a touch of cayenne pepper for added heat , your option , cook and stir constantly for about 3 mins , then add the previously cooked shrimp to mixture and stir together until heated through out . Serve over pasta . Couldnt find my recipe for this one , tried to remember it , butter amount may need to be tweeked.
