Ingredients:
2 tablespoons fresh lime juice
1 red bell pepper , seeded and diced
1 tablespoon low-sodium soy sauce
2 tablespoons fresh lime juice
salt to taste
1/2 cup light coconut milk
1 tablespoon freshly grated ginger root
1 tablespoon brown sugar
20 large shrimp , peeled and deveined
freshly ground black pepper
3 cups cooked rice
1/2 cup cilantro sprigs
4 skewers metal or bamboo
1 jalapeno chilli pepper seeded and finely chopped
1-1/2 cups fresh crushed pineapple , drained.
For the salsa :
1: Place pineapple , jalapeno pepper and red pepper in a bowl and toss together . Season to taste with lime juice and salt . Refridgerate til ready to serve .
For the grilled shrimp :
1: Combine coconut milk , lime juice , soy sauce , ginger and brown sugar in a bowl . Add the shrimp , toss to coat shrimp evenly and refridgerate for atleast 30 mins or overnight .
Preheat grill to a medium heat .
Remove shrimp from the coconut mixture . Season with salt and pepper and place shrimp on skewers.
Place on grill and cook until shrimp are just done , 3-4 mins per side .
Serve shrimp over rice and top with salsa . Garnish with celantro .

I got some good seafood recipes , seeing I,m from new england , I live two towns away from where they filmed the movie The Perfect Storm . I,ll post more down the line .
