Mussels or Clams Marinara

This is how I make mine

1 T. extra virgin olive oil
little butter
red crushed pepper flakes your taste
2 to 3 garlic cloves minced
4 greens onions with some stem chopped
14 ½ oz can Hunts crushed tomatoes
or use large can of Hunts tomato Sauce
1/2 tsp. Italian seasonings
1/2 tsp. dried basil
1/2 tsp. fennel powder
1/4 c. wine red – white or Andre champagne
1 lb. mussels cleaned debearded or use Clams the cherry ones
8 ozs. linguini pasta
1 lemon - cut into wedges for garnish

Using large skillet warm oil ñ butter- just a little red crushed pepper sauté garlic with green onions ñ few stems chopped till just tender-do not burn.
Add tomatoes- Italian seasoning- basil ñ fennel powder- to skillet- reduce heat to low to simmer for 5 minutes. Taste adjust salt
Start large pot of lightly salted water to a full boil. Add pasta – al dénte- drain

Add wine- mussels to skillet- cover - increase heat to high for 3 to 5 minutes till musselss shells open up.

Pour over hot cooked pasta al dénte- sprinkle with parsley squeeze lemon wedge over all. Garnish with remaining lemon and serve

Notes~ Use Good freshly grated cheese if you like..Adding more red crushed pepper to the table with buttered crusty hot bread.

Can add scallops –shrimp ñ some clams if you like!

If you want -just make a broth type of this recipe instead of thick sauce- just use Hunts tomatoes with juice with added liquid - even can use chicken broth.

I really like clams, but can never find them here. (small town markets) I did how ever save the how to. Just in case. Thanks CF :D
