Here is a sauce for those fish Tacos....One of my FAV Pictures are awesome
Jalapeño Ranch Dressing
Makes 1 pint
1 pt. Ranch Dressing your favorite
¼ cyp cilantro stemmed ñ chopped
½ jalapeño fresh minced discard seeds or to taste
Have some lime wedges cut up also
go on the slice cabbage add few diced roma tomatoes n diced green onion if you like
Try My Guacamole
Guacamole with Serrano Chile
1/4 cup red onions chopped fine
1 to 2 serrano chile seeded and chopped fine
1 clove garlic, minced
2 -3 ripe avocados
1 roma or plum tomato chopped fine
cilantro chopped fine about palmful no stems
1 ½ T. lime juice or just squeeze 1/2 fresh lime
salt to taste
Cilantros leaves little optional not much
Peel avocado- remove pit - chop flesh into cubes into a large bowl - mash roughly with a fork- don't mash it too much, you want a slightly rough consistency or see notes*
Add rest all other ingredients mix to combine well. Taste guacamole - adjust seasonings as necessary.
for extra flavor or little salsa.
~Notes for creamier type ñ for gucamole to go further - add sour cream – purée all or just hand mix. Handmix just guacamole ñ sour cream if your want chunky tomatoes ñ etc.
If chunky can add tiny diced roma tomatoes little cheese ñ black olives with more serranos or jalapeños for heat.
Variation ~ I use is all the above add 2 tsps. homemade salsa or habanero salsa - chopped black olives- Mexican Blend grated cheese- a few green onions with some stem chop with sour Of course- I add little more lime juice cause of the amount which helps guacomole to stay greener longer..

HJ, I just made a batch of your Jalapeno Ranch and this stuff is gooood!
I started out with 1 jalapeno and just a little cilantro thinking that should be plenty. It wasn't. After I put in the amounts that you said, it turned out really good. My son doesn't like spicy stuff, but I bet that he ate 1/2 of it.
We ate it with BBQ chicken breast and also just dip chips. Good either way!
