Smoked trout spread.

Texas trout season is a little over a month away, and with the exception of parts of the Guadalupe, it's all "put and take". Here's a way to use those fish all year long.


Spiny's Smoked Trout Spread.


1/2 cup flaked smoked trout
1 shallot finely chopped
1 Tbsp fresh thyme finely chopped
1 8 oz package cream cheese at room temp.
Pinch of kosher salt
Tsp of fresh black pepper

Combine all ingrediants except the trout and mix well then fold in the trout. Serve on plain water crackers.

I pre smoke all of the trout, (Just gut n' gill and smoke on sheets of foil at around 225), pick the meat from the bones then vacume seal it in 1/2 cup batches to use throughout the year.

No trout around here, and no smoked fish that I know of in the area. It sounds pretty good - somewhat the same as smoked salmon spread, if I remember right!
