Fish Tacos - Texas Style

This is becoming one of our favorite meals, it's quick and easy + the kids really like it. Im going to add this to my website, but thought I would post it here first.

Lightly coat the fillets with EVOO and dust on TGD, heavily. In hot skillet melt 2 TBSP butter, add fillets and cook until done. They cook quickly, about 2 - 3 minutes per side, tops. They are best when a blackened crust forms on the fish. Remove from heat and squeeze on a little of the lime juice.

We like to serve our corn tortillas hot off the griddle. For extra good tacos, use 2 corn tortillas per taco, put the cheese in-between the two and let it melt while on the griddle. Then load it up with all the fixins. Muuuummmm Goood!

Don’t forget the hot sauce!


5 or 6 Tilapia Fillets
EVOO
Butter
Texas Gold Dust
Corn Tortillas
Limes


For Fixins - we like:
Shredded Pepper Jack Cheese
Diced Tomatoes
Diced Red Bell Peppers
Diced Onions
Shredded Lettuce
Chipotle and Mustard Pepper Sauce

Very nice- I like the 'blackened' fish much better than the usually-found breaded and fried sort. I also like the act you used fresh veggies and not cole slaw - eww, soggy fish!

Tried these lastnight and I must say that this is one of mine and my wife's new favorite meal!!! Chipotle and mustard pepper sauce was the iceing on the cake.
