Jim's Creamy Crab Salad
1 1/4 cups lump crabmeat or immitation crabmeat (surimi)
1/4 cup thinly chopped tomatoes
1/4 cup thin sliced celery
2 Tbs minced green onions
2 Tbs Grated or shredded cheddar cheese
1/3 cup Mayonnaise or Miracle Whip
1/4 tsp salt
Fresh ground black pepper
1 Combine crab meat, cheese, tomatoes, and celery in a bowl.
2 Mix miracle whip and onion and salt and pepper together.
3 Pour over crab meat. Toss together and refrigerate for about 2 hours before serving.
Servings: 3
You could also use chopped shrimp, scallops, or a combination of them with this. Or any other seafood you like.

Miracle Whip is my fave while the Mrs prefers the other stuff. For years we would have a jar of each in the fridge....I finally gave in and now we only stock mayo

Thanks for the recipe, Jim! I'll have to use imitation for mine, but that'll work for us. Wonder how something like roughy or tilapia would work, especially grilled?
