Grilled up some salmon last night. Nothing too special. I tend to undercook pieces like this for whatever reason and usually have to take it back to the grill. Never thought about checking temp on these but a buddy of mine told me 160 degrees on seafood so I actually checked this last night and it turned out some of the best I have ever made! May be elementary for some but I swear I have never even considered checking temps on salmon. Accompanied with some bacon wrapped scallops that almost didn't make the picture because there were three skewers but they went quickly!

Yeah, well done! I think that 160° are fine for seafood because maybe avoid that it becomes too dry...yeah the first problem of seafood grilling is the loss of humidity of the fish that can play an ugly joke...so keep the temp low and everything will be ok
