8 ozs. crab meat pick over
1 c. jasmine rice cooked
3 Tbsps. butter*
2 garlic cloves or use some garlic granular to UR taste not much
1 small bunch of spinach wash ñ cleaned
1 to 2 fresno chile peppers or 1/2 red bell seed ñ slice thin
touch of red crushed chile peppers
salt ñ pepper to taste
lemon zest or juice to taste optional
*some extra butter in it all for that extra taste.

Cook rice according to package directions.
Melt 2 Tbsps. butter in large skillet - medium heat - add garlic ñ stir often. Stir in spinach ñ wilt - season with salt ñ pepper.
Small pan heat remaining butter ñ add crab ñ still well warmed ñ can add lemon juice or zest - about 3 minutes. Mix with the cooked rice ñ add more butter if U like.
Serve
Notes~ Now love fresh roasted green chiles - I depending on WHO is coming for diner do one of two things. I either add some fresh roasted chopped or sliced no seeds right to the rice or place a plate full of roasted green chiles off to the side for my guests. I have also added cooked crumbled bacon to this dish. Wow. it was whoofed up in minutes.
