We cook our reds on what people call "the halfshell". The way this is done is we fillet the fish leaving the skin and scales on. Then we fire up the bbq pit and get it nice and hot. Then we take the fillet and put it skin side down with 3-4 pads of butter spread across it and season it with Tony Chaceres (sp?) cajun seasoning and let it cook until it starts to flake when pulled with a fork. the last 5-10 minutes I take an italian dressing bottle and squeeze the dressing across the fillet and allow it to finish cooking. This is maybe my next favorite way to cook reds after blackening. The skin acts like a barrier collecting the butter and dressings. MMmmmm MMmmmm good, now Im hungry!!! GREAT!!!

Laura, I feel the same about the local fish. Les and I love to go fishing but always throw them back because we're afraid to eat the lake fish. We have a friend who fishes in a private pond and brings us crappie quite often. I have two gallons of it in the freezer right now. All other fish we buy.

Les tells me that Lake Eerie walleye are the best fish you'll ever put in your mouth. After living up north for 9 years, I have yet to taste any. lol

1. Wild yellow (flathead) catfish caught in the Colorado River in Texas. The belly meat is the best part.
2. Flounder from the Gulf of Mexico.
3. Redfish (or red drum) from the gulf of mexico.
4. Speckled sea trout (gulf of mexico.

The shorter list is "fish I don't like". Ain't too keen on carp, sawfish,or those little pickled rabbitfish fry in the jar or the fried herrings in the cans.
Caught me a few bowfins, but ain't never cooked any of the scary things.

My two favorite are grilled tuna and blackened mahi-mahi. Our local Brookshires carries frozen "fresh" tuna steaks, just not like the real fresh. Local fish.
Crappie-fried, nothing better
Catfish
Plate-size bream
