Grilled Shrimp Kebabs

Jim's Grilled Shrimp Kebabs


2 lbs large shrimp, peeled and deveined
1 green, red or yellow pepper, cleaned, seeded, and cut into 1 1/2" squares
2 zucchini squash, cut 1 1/2" pieces
2 onions, cut into chunks
1 can pineapple chunks
3 Tbs vegetable or olive oil
3 Tbs soy sauce
1 Tbs honey
1/2 tsp ginger



1 Alternate shrimp, onion, pepper, squash and pineapple on skewers.
Mix pineapple juice, oil, soy sauce, honey and ginger together and brush onto kebabs.
Grill over a moderate heat for approximately 10 minutes.
Rotate kebabs once and use any remaining sauce to baste kebabs.
2 Serve with lemon wedges and wild rice.

Cherry tomatoes or other vegetables can be substituted for the onions or peppers if desired.


Yield: 6.00 to 8 kebabs
