Any Fish Filets Over Tomato ñ Sweet Pepper

4) 6 ozs. any fish filets
salt ñ pepper to taste
3 ozs. olive oil
2 T. garlic sliced thin
1/2 c. onions medium dice
1/2 c. red bell peppers small dice
1/2 c. green bell peppers small dice
1/2 c. yellow bell peppers small dice
1 c. Hunts tomato puree or saute (or chopped canned tomatoes drained
2 T. basil fresh chopped
1 T. capers
3 ozs. kalamata olives pitted

Season any fish filets with salt ñ pepper. Heat sauté pan to medium high- add olive oil. Sauté fish about 4 minutes or until golden brown (just on one side. Set aside.
Add sliced garlic in same pan until golden brown- add onions ñ peppers -cook about 6 to 8 minutes or until soft. Add tomato concasse- basil- capers ñ olives. Cook 6 minutes longer or so .
Return fish to pan with seared side up and simmer 5 minutes to reheat. Serve immediately. Serves 4.
