Buttermilk Fried Chicken with Green Chile Horseradish Sauce

2 lbs. fresh green beans trimmed
2 T. butter
Salt ñ pepper
Green Chile- Horseradish Sauce listed~
Buttermilk Fried Chicken
srirachi is prepared garlic chile sauce optional

~Buttermilk Chicken
2 ½ lbs chicken breast cutlets
1-2 c. buttermilk
1 c. all purpose flour
salt ñ pepper to your taste
Oil for frying

~ Sauce
1 stick plus 1 tablespoon unsalted butter
4 ozs. can mild green chiles
2 tsps. prepared horseradish
1/2 c. sweet pickle relish
2 c. heavy cream
Salt

Bring large pot of salted water to boil. Add beans- cook 3 to 4
minutes- remove - cool in bath of ice water. Prepare Green
Chile-Horseradish Sauce ñ Buttermilk Fried Chicken. While chicken cooks-
heat 2 tablespoons butter in large sauté pot-add green beans -
season with salt ñ pepper. Keep warm. To serve- spoon 1/4 cup Green
Chile Horseradish Sauce onto each plate. Top each plate with 1/8 green
beans with 1/8 of cutlets. Garnish each plate with srirachi sauce by drizzling plate.

Chicken ~Soak cutlets in buttermilk 2 hours. On plate
- combine flour- pepper ñ salt. Heat oil 350° F
Remove chicken from buttermilk -dredge in the flour.
Fry until golden brown - crispy on outside- 5-10 minutes
depending on size of cutlets. Drain on paper towels.

Sauce ~ melt 1 tablespoon butter in a pan over medium heat -add chiles-
horseradish ñ pickle relish. Cook 3 minutes - add heavy
cream. Turn heat to medium high-cook 3 minutes- then puree in food
processor or blender -~be very careful with hot liquids in the blender~ as
they can overflow suddenly. Strain mixture -return to saucepan
over medium heat. Add remaining butter ñ cook- stirring occasionally,
until sauce is reduced to about 2 cups sauce should be fairly thin. Keep warm
A mistake is sometimes a great creation
