South of the Border Style Spiced Chicken

2 1/4 lbs. chicken any parts U like
2 tsp. chili powder
2 T. olive oil -Canola or vegetable oil
14 1/2 oz. Mexican-style tomatoes *
4 0zs. Green chiles chopped or use fresh jalapeno's seeded
diced fine or use1-2 serrano's Poblano's are good also
if U don't like it hot.
2 T. lime juice fresh or ur taste
little paprika sprinkled
shredded lettuce
Monterey jack cheese or favorite shredded

lime wedges
corn tortillas warm

Rub chicken with chili powder. Use a large skillet- medium
heat with heated oil. Add chicken- brown nicely each side to ur liking.
While chicken browning -use medium bowl- combine tomatoes- chiles-lime juice with pepper sauce-add to skillet. Reduce heat -medium low- cover - simmer 12 to 15 minutes, or until chicken is cooked through.
Serve chicken on bed of shredded lettuce
top with sauce from skillet. Sprinkle with favorite shredded cheese.
Garnish with limes- n basket of warm tortillas.

Notes*Use Hunts diced tomatoes n add little onion -garlic-the added peppers will make it like Mexican tomatoes or Rotel.
Using Rotel n using extra HOT peppers will really make it hot.
A mistake is sometimes a great creation
