2 cans chicken broth -brought or homemade defatted
2 T. pickling spice
1 lb. chicken boneless skinless breast halves or any parts
3 garlic cloves large minced
1 T. X virgin olive oil
2 tsp. gr. cumin
1/2 red bell pepper sliced
1/2 yellow Mexican pepper sliced
2 T. jalapeno pepper minced with seeds or use serrano's
1 onion- halved thinly slices
1/3 c. rice wine vinegar
1/4 c. cilantro leaves fresh
baked (no oil tortilla chips
Boil broth with pickling spice in large saucepan about 10 minutes. Strain - return liquid to pan.
Add chicken- onion vinegar-garlic- oil - cumin to pan. Simmer over low heat until chicken is just cooked through close to 9 to 10 minutes. Transfer chicken n onions (with slotted sppoon to shallow dish.
Top with bell pepper n minced chile peppers.
Bring remaining cooking liquid until reduced to 2/3 cup-10 ten minutes or so. Pour liquid over chicken -cool 30 minutes.
Add cilantro to chicken mixture. Cover n refrigerate until well chilled- turning chicken occasionally- 4 hours (Make one day ahead if U like.
Slice chicken -REHEAT it all n transfer to plates. Top with marinated vegetables n some of the juices. Pass tortilla chips. 6 servings
Notes~ Love this recipe when u know company coming n got many things to do that day n able to make it days ahead n just slice n re-heat it.
