1 package of chicken breasts
2 cans of red beans
2 cans of corn
2 cans of Rotel (chunky tomato kind)
package of your favorite taco seasoning
optional: jalapeno slices
(don't drain any veggie cans' juices - leave em! it's better that way!!!)
boil chicken breast till done, then shread it.
Add a can of chicken broth
combine EVERYTHING IN A STOCK POT
let it simmer (med/low heat) or crockpot for 'a good piece'
serve on top of tortilla chips/sour cream/chives
top with fresh grated cheese -
AND YOU GOT YOURSELF A GOOD MEAL!
