Chicken taco meat

Nothing fancy about this, but it's a good way to use your leftover chicken, especially BCC bird.

2 cups shredded chicken, white and dark meat
1/4 cup chicken broth
hot sauce to taste
about 1.5 tbsp BBQ rub to taste
salt and pepper for seasoning to taste

1. Have the meat in comfortable-sized pieces for serving. Rough-chop the meat for smaller pieces, if desired.
2. Cook the meat in a hot, oiled skillet for a couple minutes or so, enough to get some carmelization.
3. Add the broth, hot sauce, and rub.
4. Stir until the broth just evaporates.
5. Check for taste and add rub, hot sauce, or even salt and pepper to taste. You can also add a little more broth if this is too dry for you.

Serve with chips, tortillas, or shells. Have lettuce, tomato, onion, shredded cheese, picante, etc. for build-your-own meals.

Sounds great! I made chix taco meat a couple of weeks ago, and the kids liked it even better than ground beef!
