Here is a Chicken recipe with a Filipino flavor...
CHICKEN ADOBO
3 pounds chicken thighs, skinless with bone. Cut in half thru bone.
1/2 cup white vinegar
1/2 cup soy sauce
1 tsp brown sugar
2 Tablespoons peppercorns, rough crush half of it
5 cloves garlic, crushed
3 bay leaves
salt to season
Combine all ingredients in a non-reactive pan or large bowl. Let marinate for 1 to 3 hours. Place in saucepan and bring to boil, cover then lower heat to simmer fo 30 minutes. Remove cover and simmer for another 15 minutes or until most of the liquid has evaporated and the chicken is slightly browned.
