For the last few Thanksgivings I've been smoking the turkey. It's come out pretty great every time. This past Thanksgiving I decided to try something different, and not to toot my own horn here (which is what people say when they're about to toot their own horns,) but it was the best, moistest turkey I've ever had. I got rave reviews from everyone at the table and what little leftovers there were, were gone within 24 hours (I have teenagers in the house!)
Here's what I did:
Step 1: Spatchcocked my bird. Which is just plain fun to say.
I was working with a 19 pound turkey.
Step 2: Mixed a bunch of garlic, onion powder, sage, thyme, basil, black pepper, and rosemary (which I will probably not use next time - its bitterness doesn't mix well with smoke,) into a bowl of mayo.
Step 3: Rubbed the mayo mixture all over the bird as well as under the skin where it was loose.
Step 4: I was also smoking a brisket that day. Once the time came for me to crutch, I added the turkey into the smoker. But first, I put a large pan under the turkey (over the water pan.) I filled it with a chopped up onion, some baby carrots, a bit of water, some of the leftover mayo mixture, and a bottle of beer.
Step 5: The turkey went in, under the brisket.
Step 6: The finished product! The timing was ALMOOOOST perfect. The brisket had to go in for 10 more minutes after the turkey came out.
That brown layer you're seeing isn't the skin, it's the mayo.
Step 7: EAT.
