Lately I've messed around with using mayo on my steaks on the rare occasion that I sear them in a skillet (I normally reverse sear them with a kiss of smoke.)
For the last few years I've smoked my turkey (spatchcocked!) - I usually just follow meathead's recipe, which calls for rubbing a mixture of oil and herbs under the bird's skin before putting it in the smoker.
The other day I had an idea: What if instead I made a mixture of herbs and mayo to rub under the skin?
Is this crazy? Or genius? Or both?

I can tell you that Rudy's rubs their turkey (they just use the breast) with mayo B4 smoking.
Oh I see you ain't from Texas so you don't know Rudy. Rudy's is a local chain that evolved from a single location and unlike many similar outfits they keep their quality up.

I understand that Bamalambians slather white mayonnaise based barbecue sauce all over their stuff like at Big Bob Gibsons (don't shoot the messenger folks, just reciting the facts, Ma'am) so who's to say who nuts and who's a genius? BBG's recommends it highly for chicken and turkey, so it may just be that yer droppin your experimental moldboard off into an already-plowed row, so maybe not a crazy idea after all. Anecdotally, I got a good friend who is a many-generationed Bamalambian-Auburnian as a matter of fact, who raves about BBG and the white sauce (amongst other conspiracy theories like flying barbecue pigs, hounds-tooth fedoras being a Satanic symbol, and the illegitimacy of the designated hitter).
Said in the parlance of today's youth: Maybe "it's a thing".

I've made Big Bob's white sauce, with a slight twist. While my wife called it "heart attack waiting to happen sauce" I personally like it on smoked chicken.
