turkey legs

Ok, I want to make turkey legs like the ones you buy from a street vendor or at the carnival or football game or whatever. The ones where juice is dripping all over you and the meat is falling apart and the skin is tender and perfect. Any advice???

Shoot'em full of this Stuff and then Cook until done - - - - Dealers choice on the wood/etc/flavor - - - Good Luck :tup: :salut:

Holy crud, wish I saw this sooner. Lol! I make these as often as I can find the fresh legs. I wet cure them like a ham first; usually about a week process; brine bath and injection. Then I smoke em low and slow til they're done, usually about 3 hours at 275 (for 8 legs). The only thing missing from them is the 12 dollar price tag you get at the fair!

Yep I do what you do Tx dragon only problem is finding the legs....

My favorite for making the brine was Mortons Sugar Cure but I think they've quit making it.
