A merry can dinner tomorrow.

Postby Russ » Sat Mar 10, 2018 12:02 am

So oup got me onto beer butt chicken, our weather has been a bit indifferent so I've twice taken birds out and couldn't use because of rain. Tomorrows a nice day so 2 chickens out of freezer and on with chicken rib tickler and on the BBQ. I'm doing corn bread aunt Martha's. I loved the last time I made this. Twice fried fries. And coleslaw my way. My kids are looking forward to it. Pics in about 18 hours, I just know they will love the chicken done this way. I'm quietly excited about this. :chef: :chef: :happ:

Update, our house is bedlam at serving time, wee kids come first ( except when carving chicken, son n daughter grabbing the chicken skin) cornbread was a huge hit but I burnt it a wee bit on bottom as I had it over direct flame. Lesson learnt. Granddaughter just raved how good it was with lashings of butter. Corn wrapped in foil n butter and salt n pepper done over flame was also a huge hit. Coleslaw was good too. You just can't get chicken better than beer butt. Sorry no pics but will post leftovers pics soon so you can get the idea. Sammiches tonight. The fries were only average as my normal potatoes weren't available.

Oh God, that looks delightful.
Looking forward to more camping trip with my family. I need a new tonneau cover to secure my equipment and pit.

It was really a great meal, I'm doing it again as it was that popular. I'd do cornbread a bit differently though.

No, I followed instructions to the letter, my mistake was cooking it direct over heat and it burnt the bottom a bit, I just cut that bit off, taste was still 100% as my granddaughter really loved it with lots of butter, everyone loved it. Next time I'd put it higher in the BBQ.
