Southern fried chicken

I recently had this at a country pub called the Moutere inn while on holiday at Christmas. Man it was that good we went back a few days later to have it again, I've been researching this and got tips off YouTube with Thomas Keller and I e mailed the pub and the chef told me what he put in this mix, I've tried it on some small pieces during the week and liked it a lot. But I did it without buttermilk. So today's full on making, I soaked chicken in water for 12 hours then in buttermilk for 6 hours. I'll put pics up as I cook in about 5 hours. The flour mix is a blend of stuff that I will post later. I'm looking forward to it, I'm doing coleslaw n twice fried chips. I also
got a tip from this board and used cornflour as well.

This was amazing, great compliments from everyone, maybe a bit less thyme and I'm nearly on the money. I made the coleslaw and twice fried chips were perfect sides. A bit of aioli and BBQ sauce and we're done. All empty plates.

Thanks, I'll be doing this again, son took leftover chicken and slaw home for his meals today, granddaughter who doesn't like slaw, loved mine. Daughter in law was adamant she wouldn't eat it,lol. I'd use slightly less thyme next time and a bit more chilly flakes. Apart from that it really was something really nice. Thanks YouTube Thomas Keller the Moutere inn and this site for all the tips to make a great meal. Buttermilk is now my good friend.

Never liked the look of okra, it's big in Indian cuisine, I may just give it a go, I found a recipe that looked good. Update later.
