Them's some right tasty lookin' birds there James. :D :D
We either smoke them and finish on the grill to crisp the skin or grill them indirect and then finish them direct for a crisp skin. :D :D

I usually grill them indirect. Going to butterfly the next ones though.

The answer is "a chicken less than 6 wks old". Thought I'd get more folks to bite on "always female" as Cornish game hens can be either sex.
