Chicken Lemon Fennel

1 x Full chicken cut up
2 x Fennels
7 x Large spuds
2 x Large tomatoes
2 x Juiced lemons
5 x Cloves of garlic
2 x Tbps oregano
100ml Olive oil
120ml Water
Salt and pepper
Cook for 2hrs all up.
Lay thick cut potatoes on bottom with fennel.
Sprinkle salt and pepper over food.
Place chicken skin side up.
Pour mixed lemon/oregano/garlic/tomatoes/olive oil mix all over food and mix the food around. Re-position chicken, skin side up again.
Tip 120ml of water in one corner of tray.
Cover with foil.
Cook for 1.5hrs with foil on.
Remove foil and cook for another 30min
Put in pizza oven around 200/220
