Something to do with Leftover Turkey

I saw this on TV this morning. Looked good.


Open Faced Turkey Burgers With Giblet Gravy

3 cups leftover turkey, shredded
6 whole eggs
1 onion, diced
1/2 cup cooked leftover Brussels sprouts, sliced. Or Green Beans diced or bell peppers diced.
1/2 cup cream
3/4 cup finely ground bread crumbs (or leftover stuffing)
1 Tablespoon salt
1/4 tsp. cayenne
4 leftover dinner rolls
1 cup giblet gravy
1 cup flour
3 Tablespoons olive oil
1 bunch flat leaf parsley


Place the shredded turkey in a bowl and add the onions, Brussels sprouts and 1/2 cup bread crumbs. In a separate bowl, combine the cream and 2 eggs. Season the turkey mixture and add the egg mixture. Form into four patties

Beat the remaining 2 eggs in a separate bowl

Place remaining 1/2 cup bread crumbs in a separate bowl or plate

Roll turkey patties in flour, then beaten eggs, and then the bread crumbs

In a saute pan heat 3 Tablespoons of olive oil over medium heat and saute the turkey burgers until nice and crisp. Separate the rolls and heat in the oven . Heat the giblet gravy, place the rolls on the plate and top with the seared burger then the giblet gravy. Garnish whole parsley leaves on top.
