Easy Southwest Puffs Hj’s

1 c. Bisquick baking mix
1 tsp. salt
3 Tbsps. butter
5 Tbsps. roasted green chilies fresh chopped or UR taste
1 egg
1 c. Cheddar cheese shredded
*see meats poultry or seafood * use as much as U like.

Preheat oven 400° F.
Grease cookie sheet. Medium bowl mix 1st four ingredients together ñ fold in cheese. Drop dough by rounded teaspoonful’s - about 1” apart onto cookie sheet. Bake 10 to 12 minutes or till golden brown.

Note~ throw in some herbs if U choose too. Use this recipe to create puffs on bottom of baking dish ñ around *cooked shredded chicken- turkey - pork or beef ñ bake.
Add hot enchilada sauce *over top ñ around the puffs after baking. Baking will take longer with meat inside. Serve with rice ñ refried beans ñ a small salad.
*When adding chicken - turkey ñ pork - I add cumin powder ñ diced roasted gr. chiles with touch of Mexican oregano into meat mixture ñ mix before centering meat into center ñ pour batter over top ñ around so it incases any meat. Do as U like with it - using even8 fajita meat. Can use *shrimp also ñ watch the baking time or add shrimp alittle after baking is started so it doesn’t become tough SHRIMP.

Note~* make enchilada fresh or buy it ñ always have enough on the side for those who like enchilada sauce. With chicken – turkey or pork use green chili sauce ñ beef use the red. Shrimp can use either one – choice s up to U
