My father n law just came back from a Pheasant hunt with a couple of Pheasants and wants me to cook em...I was wondering if anyone had any ideas the best way to prepare them and grill or smoke them????

The only time I have had Pheasant, they were cooked up in a wok like fajitas. Goood Stuff too

I had the pleasure of eating phesant a friend of mine smoked; he said he brined it in a simple salt/sugar brine over night, rinsed, patted dry, rubbed down with EVOO, applied seasoning, and smoked at 275* to an internal breast temp of 165.

Cut up the breast like chicken strips and batter with lousianna fish fry and deep fry.

I grew up in pheasant country so I have eaten a few. Like most game they are lean and tend to be on the tough side so any efforts to increase/retain moisture are appropriate. One of my favorites is casserole style, put the meat in a casserole pan, mushroom or COC soup, top with onion slices and a good sprinkling of black pepper. Also wrapping in bacon is good.

Ditto on the bacon. My grandmother on my dads side called them "government chickens" since the government initially stocked them (they are native to China). Today that action would be considered an invasive species and the tree huggers would have fits. What would you rather eat, pheasant or a coot? Back to bacon. Bacon good. Especially when wrapped around pheasant breast (which is 80% of the bird).
