Southwestern Grilled Chicken with Corn ñ Black Beans or use

3 T. lime juice
1/4 tsp. chili powder
1 garlic clove minced
1 tsp. cumin powder
4 chicken breasts skinless boneless
1) 15-ozs. favorite or homemade salsa
1) 8 oz. can whole kernel corn drain well
1 small can black beans rinsed drained well
6) 12”flour tortillas or corn tortillas

Preheat grill.
Mix together all other ingredients as marinade for chicken- EXCEPT salsa – corn ñ tortillas.

Pat chicken dry – add into marinade. Marinate- in zip lock bag or covered in a bowl –place in refrigerator- turning occasionally to coat

Remove chicken after about 30 minutes of marinating ñ preheat grill -cook over hot coals. Grill till juices run clear when pierced with a fork or UR liking ñ nice grill marks shown -turning frequently.

Combine salsa - corn ñ black beans in a small saucepan. Bring to boil ñ simmer over medium heat. Warm tortillas on grill or in micro

Remove grilled chicken cutting into strips – place in bowl ñ serve with heated salsa mixture over top –mix together. Place mixture into warm tortillas. Serve with sour cream –guacamole or some shredded cheese ñ sliced lettuce. Great easy meal.

Notes~ Have marinated chicken in Rudy's BBQ sauce instead of listed marinate ingredients above also..turned out great.
A mistake is sometimes a great creation
