4 pieces chicken (breast –wings or leg ñ thigh pieces
salt ñ freshly ground pepper
Balsamic BBQ sauce~
1 c. balsamic vinegar
3/4 c. ketchup
1/3 c. brown sugar
2 garlic cloves minced
1 T. Worcestershire sauce
1 T. Dijon mustard
1/2 tsp. salt
1/2 tsp. freshly ground black pepper
Combine all sauce ingredients in a small saucepan -stir
until all is mixed well ñ mixture is smooth. Simmer on medium
heat -reduce by 1/3, about 15 to 20 minutes.
Place grill pan over medium heat or preheat a gas or charcoal
grill. Season meat with salt ñ pepper. Lightly coat with
little BBQ sauce using a pastry brush. Place meat on grill.
Place remaining BBQ sauce- still in small saucepan-over
low heat or on edge grill –let it gently simmer while meat cooks.
Grill chicken about 8 minutes per side or as usual. Continually brush
meat with BBQ sauce every few minutes. Remove meat from
grill. Serve with sauce on the side.
