Chicken with Smoked Gouda ñ Pimientos

1/2 c. Gouda cheese- smoked shredded
2 T. scallion chopped
1 T. pimientos sliced chopped
1 tsp. paprika divided
4 small boneless, skinless chicken breasts (1 ¼ -1 ½ lbs. total- trimmed
1/2 tsp. salt, divided
1/2 tsp. freshly ground pepper, divided
1 T. X-virgin olive oil

Preheat oven 400°F.
Mix together Gouda- scallion- pimientos -1/2 teaspoon paprika in small bowl.
Cut a horizontal slit along thin, long edge of each chicken breast- nearly through to opposite side-open butter-flied. Sprinkle breasts with 1/4 teaspoon each salt ñ pepper. Divide cheese filling among breasts, placing it in center of each. Close breast over filling- pressing edges firmly together to seal. Sprinkle breasts with the remaining paprika- salt ñ pepper.

Heat oil in large ovenproof skillet over medium high heat. Add chicken - cook until browned 1 side- about 2 minutes. Turn chicken over -remove skillet to oven. Bake until chicken no longer pink in center- thermometer inserted into thickest part registers 165°F- about 15 minutes.
