4 strips bacon
1 ½ lbs. chicken boneless skinless or use tenders ñ cut
2 c. buttermilk
2 T. hot sauce
2 ½ c. all purpose flour
2 tsps. cayenne pepper
2 tesps. paprika
1 tsp. garlic granular
1 T. salt
1 tsp. ground black pepper freshly
2 c. canola oil
~Blue cheese Dip
3/4 c. sour cream
1 T. mayonnaise
Little salt to taste
Touch of garlic granular
1/4 c. blue cheese room temperature cut into small pieces
Preheat oven to 375 ° F.
Place bacon micro for 4 minutes or crisp covered or bake 12 minutes. Remove bacon to drain on paper towels. Reserve 2 tablespoons bacon fat. Crumble bacon when cool enough.
Cut chicken into bite size pieces. Large bowl combine buttermilk- hot sauce ñ chicken. Cover- let marinate in refrigerator 2 hours or up to overnight.
Glass baking dish-whisk together – flour- cayenne pepper- paprika- garlic granular -salt ñ pepper. Remove chicken from buttermilk- add to seasoned flour. Make sure all chicken pieces are thoroughly coated. Remove chicken from flour mixture -place back into buttermilk. Remove chicken from buttermilk - put back into seasoned flour mixture -2nd coating. Remove chicken to baking sheet- reserve.
Heat canola oil in large cast iron skillet to 350 F. Add reserved 2 tablespoons bacon fat. Working in batches- fry chicken until golden brown- about 3 to 4 minutes per side. Transfer cooked chicken to a sheet pan lined with paper towels.
Medium bowl stir together all dip ingredients. Stir in crumbled bacon.
Serve chicken with dip on side.
