Alright - I had my first successful smoking, and I chose chicken legs for the culprit.
1st - I trimmed the excess fat off.
2nd - I rubbed a bbq rub on them...Brand escapes me at the moment.
3rd - I set in the fridge for an hour.
4th - I injected 50/50 mix of Soy Sauce and Italian Dressing in them.
5th - Smoked at 250 until internal temp was at 165...about an hour and a half.
These things were excellent, and I got many compliments from coworkers!!
I'm sure there are things that could have been done differently that the experts would advise, but I consider these a huge success!!
