Jalapeño Salsa ñ Glazed Chicken Pineapple

¼ c. pineapple juice
2 T. brown sugar packed
1 T. mustard

salt ñ pepper

¾ c. pineapple small cut cubes
3 T. red bell pepper dice fine
3 T. cilantro dice fine
1½ T. red onion dice fine
Dash of garlic granular to taste
1 ½ T. jalapeño or serrano chilies seeded dice fine

Salt to taste

4-8 or 1 ¼ lbs. total chicken pieces
Depending what sort chick pieces using

Preheat oven 400° F.
Using small pan bring 1st three ingredients to a boil-stir until glaze has thickened –maybe a minute-season with salt ñ pepper to ur taste.
Mix in medium bowl-pineapple ñ ingredients through including jalapeño or serrano-salt to taste.
Use large lined baking sheet (line sheet with foil. Brush chicken with glaze–bake 15 minutes –turn brush again. Turn broiler on –broil without burning ñ cooked through to golden –maybe 5 to 6 minutes –Watch them. Rest chicken couple minutes. Spoon salsa over chicken-serve with cooked rice. Warm floured or corn tortillas. About 4 servings

Note~ If grilling -place chicken grate lined with foil or cooking flat in order to save some glazing. Just grill –don’t use broiler. Make double the glaze.

Thanks Papa Tom ..when u get a "prematured" old as I am ...U will...lol.

Love to experiment with cooking but sometimes have to know..when not to mess with it anymore..LOL

Love everyone's recipes on here. Great cooks-BBQ'ers n Smokers they all are..
So thanks to all of you for sharing also..
