4 ozs. mozzarella cheese thinly sliced

Using blender or food processer place diced bread ñ gated cheese (parm or romano
Remove to pie pan adding 2 T. chopped basil –mix well.
Add 2 T. basil to marinara into small pan- mix well heat –stir over very low heat.
Remove 1½ to 2 T. marinara sauce into large bowl-adding *gr. chicken-1/2 T. x-virgin olive oil-onion-fennel powder ñ salt. Shape into 4 large patties- coat with crumbs *or use Panko bread crumbs instead.
Grill or fry patties until bottoms are crusty ñ brown maybe 4 minutes-turn patties over –top with mozzarella ñ finish cooking or grilling until cheese melts –cover if need be-don’t cook till chicken dries out. Have bread or buns warmed ñ toasted serving with warm sauce-extra fresh leaves of basil ñ radicchio leaves if u choose.

Notes-sometimes- I add about *2 to 4 slices of thin pepperoni -diced fine with the chicken ñ onion YUM
If making thicker burgers increase seasonings a little. Use buns if you like in place of French bread also.
Can use turkey or mix chicken with little hamburger
