Mexican Flavored Moist Chicken or Turkey

5 chicken breasts cooked cut up or any parts of chicken or turkey
1 can Mexi Corn drain well
1 can black beans drain rinse well
2 garlic cloves minced
1 to 2 tsp. cumin powder
1/2 c. tomatoes diced
1 c. potato flakes
1 T salsa chunky
3 c. Cheddar cheese shredded
3-4 T. mayonnaise -little more or use sour cream

Cook chicken ahead of time - shred or cut into chunks.

Mix chicken with mexi-corn- beans- potato flakes- seasonings-salsa ñ mayonnaise. Spread mixture into large shallow rectangular pan. Sprinkle rest of cheddar over mixture bake 350°F.- 30 minutes.

Notes~ dice up some serrano's for extra heat n flavor for milder dice up poblano's
A mistake is sometimes a great creation
