Something tells me that is better than any bacon you can buy at the store. At least, it sure looks great! I really need to try doing that.

James I had to dry off the keyboard. When it comes to Bacon I'm like the dog in the Begin Strips commercial. The only thing better than Bacon is beer and chocolate And come to think of it that would make some tasty Ancho chili chocolate covered pig candy.
Never met a cow I didn't like with a little salt and pepper.

[quote="JamesB"]I know your supposed to chill it several hours for the flavors to bloom (or what ever they call it), but I couldn't stand it no more... I had to try at least a piece, so I took the skin off the smallest slab, sliced then fried it in the old CI skillet... Over all, not bad... not bad at all really. Maybe a little salty. Next time I might back off on the TQ a bit, or leave the cure on it for 1 less day... Anxious to try the others now...

You know, even the big bacon producers put out bacon that is really salty at times. Had some Decker IIRC that was real salty once.
So your no worse that the big boys!

Got the rest of the bacon sliced up today. Dang that ain't no fun to do by hand... Think I'll be looking for a decent, economically priced slicer...

James, that looks just delicious!

I can see a new company emerging: "Uncle Jim's Country Cured Thick Sliced Bacon"

James, I have a non-commercial slicer. It works ok but two things to look at.
1.) On mine you have to keep the "on" button pressed while slicing -spring loaded button. Must be an antilitigation button   . It would be so much better if had plain on/off switch. Each time I use it I swear I'm gonna modify that switch!
2.) My table doesn't tilt so there is no "gravity" feed on the supply side. Next slicer I get will tilt.
