3 lg onions - sliced
1 small head of cabbage
1.5 lbs red potatos
smoked pork chops
1/2 cup apple juice
1/4 cup cider vinegar
coarse ground black pepper ( to taste)
1 pkg mixed dried fruit (I used 1 pkg of dried apricots, 1 pkg dried carnberry)
Cut cabbage into wedges and place around casserole pan or roaster (I used a roasting pan, becuase I doubled the recipe)
Place potatos with the cabbage (I cut them in half - even thoughthey were red potatos, they were a bit large)
Cook onions in oil until carmelized, and add them to the cabbage and taters
Cook chops in oil until lightly brown - squeeze them in with the cabbage and taters
In the same skillet you cook theonions and chops, heat apple juice, vinegar, pepper and dried fruit, deglazing pan at the same time.
Pour this mixture over chops and veggies. Cover casserole and bake at 375 for 1 to 1.5 hours, until veggies are fork tender. Baste several times while cooking.
